
Ingredients:
- 2tbsp Oil
- ¾ Kg. Sweet Potatoes, diced
- 1 Carrot, diced
- 2 Onions, sliced
- 2 Garlic cloves, crushed
- 2 ' Cups Vegetable stock
- 1 ¼ Cups Orange juice
- 1 Cup yogurt2 tbsp
- Chopped Coriander leaves
- Salt and Pepper to taste
To Garnish :
- Chopped Coriander leaves
- Orange rind

Method:
- Heat the Oil in a large saucepan and add the Sweet Potatoes and Carrot, Sliced Onions and Garlic.
- Saute gently for 5 minutes, stirring continuously.Add the Vegetable stock and Orange juice and bring to a boil.
- Reduce the heat to a simmer, cover the saucepan, and cook the vegetables for 20 min or until the Sweet Potato and Carrot cubes are tender.
- Transfer the mixture to a food processor or blender in batches and process for 1mt until pureed. Return the puree to the saucepan. Stir in the Yogurt/Curds and Coriander leaves and season to taste. Serve the soup garnished with coriander and orange rind.
