Sweet Potato and Onion Soup

Sweet potatoes are loved all over the world and believe it or not this soup is of the good ones, tastes hard and good for winter season.




Ingredients:


  1. 2tbsp Oil
  2. ¾ Kg. Sweet Potatoes, diced
  3. 1 Carrot, diced
  4. 2 Onions, sliced
  5. 2 Garlic cloves, crushed
  6. 2 ' Cups Vegetable stock
  7. 1 ¼ Cups Orange juice
  8. 1 Cup yogurt2 tbsp
  9. Chopped Coriander leaves
  10. Salt and Pepper to taste






To Garnish :

  1. Chopped Coriander leaves

  2. Orange rind




Method:


  • Heat the Oil in a large saucepan and add the Sweet Potatoes and Carrot, Sliced Onions and Garlic.




  • Saute gently for 5 minutes, stirring continuously.Add the Vegetable stock and Orange juice and bring to a boil.




  • Reduce the heat to a simmer, cover the saucepan, and cook the vegetables for 20 min or until the Sweet Potato and Carrot cubes are tender.




  • Transfer the mixture to a food processor or blender in batches and process for 1mt until pureed. Return the puree to the saucepan. Stir in the Yogurt/Curds and Coriander leaves and season to taste. Serve the soup garnished with coriander and orange rind.
